
Halloween is over. What do we do with that big pumpkin?
Here is what I do with it.
First, cut the pumpkin into two pieces and clean the innards and put them into a bowl. You may need to scrape the insides to get the stringy stuff out.
Then cut the pumpkin into slices and cut the outer skin out. This is probably the hardest part, you don’ t want to cut any of your fingers in the process. Cut the slices into about one inch cubes.

Put enough pumpkin cubes into a big pot, put a little bit of water, and cook them in medium heat until they become soft (it takes about half an hour) or they appear transparent.
Cook the Pumpkins
Then put the pumpkin cubes into a pan, put a little bit of water into the pan, and spread two cups of sugar on top. Cook it in the oven at 350F for half an hour, after covering the top with an aluminium foil. Grind walnuts and spread it over the pumpkins. You can also sprinkle some cinnamon on it. Cool it before serving. It is best to eat it with ice cream.

Roasted pumpkin seeds
Clean the squishy stuff from the seeds and spread the seeds on a shallow pan. Sprinkle coarse salt over them and cook in the oven at 350F for 15 minutes. I guess some people sprinkle sugar instead of salt. When the color changes to light brown, take it out of the oven. You can eat them without shelling them.

Put the rest of the pumpkin cubes into a smaller container and into a freezer to make pumpkin dessert another day.
